Summer Pasta Salad

Ingredients:

  • 12 oz. Box Bowtie Pasta
  • 1 Cucumber, peeled & chopped
  • 1 Pint of Cherry Tomatoes, quartered or sliced
  • 2 Small Carrots, shredded
  • 1 Large Radish, shredded
  • 1 Cup of Chopped Peppers – red, green, yellow and orange
  • 1 Small Can of Pitted Olives, sliced

For Dressing:

  • ½ Cup Olive Oil
  • 2 Tablespoons Onions, finely chopped
  • 1 Garlic Clove, minced
  • 1 Tablespoon Parmesan Cheese
  • 1 Teaspoon Salt
  • ¾ Teaspoon Worcestershire Sauce
  • ¾ Teaspoon Dried Mustard
  • ¾ Teaspoon Oregano
  • ¾ Teaspoon Basil
  • ¾ Teaspoon Sugar
  • ¾ Teaspoon Pepper
  • ¼ Cup Red Wine Vinegar
  • 1 Tablespoon Lemon Juice


Directions:

Prep Time: 15 mins |  Ready In: 35 mins  |  Servings: 6-8

  1. Cook Pasta according to the package directions. Add all of the vegetables to the pasta and stir well.
  2. In a separate bowl, mix the dressing ingredients together — ½ cup of olive oil, 2 tablespoons of finely chopped onions, 1 minced garlic clove, 1 tablespoon of parmesan cheese, 1 teaspoon of salt, ¾ teaspoon of Worcestershire sauce, ¾ teaspoon of dried mustard, ¾ teaspoon of oregano, ¾ teaspoon of basil, ¾ teaspoon of sugar, ¾ teaspoon of pepper, ¼ cup of red wine vinegar, and 1 tablespoon lemon juice. Pour the dressing mix over the pasta and vegetables and stir.
